what I'm trying to do here is I'm going through every pixel in the image and if I found it to be black, I'll change it to yellow

Reset to default
1 
image[i][j].rgbtBlue = 0x00;
image[i][j].rgbtRed = 0xff;
image[i][j].rgbtGreen = 0x00;

In the loop might work instead of saving it to a pixel variable first, because you're changing the color of pixel in the variable instead of in the actual image.

or, you can just set pixel = image[i][j] after.
