When cs50 psets and quizzes are answered and submitted, are they actually checked and marked by the staff (Humans), or everything is done by a machine? Because there'd be a whole bunch to check and mark if humans did this

It's up to you, actually.If you stick with the edx version, it is auto-graded. If you require hand grading, this is also possible through the course credit version. See the page below for a comparison of options:
