I just joined cs50 through edX.org, mainly because it was a self paced class but clearly i overlooked the dates, but seeing how it still allowed me to sign up i feel like maybe i'm glossing over some information because this is my first week and it states my final project is due by the 31st. Can someone please shed some light on this for me? I would be forever grateful. Thanks!

Starting now and trying to meet the deadline will be very difficult. I am currently on week 7 (pset5) and it's going to be tight for me.
The deadline to submit all your problem sets(psets) and final project are due Dec 31 for everyone.
You can still do the course but you cannot get a certificate if you do not submit by Dec 31st.
